caramelized onion and apple butter grilled cheese


There's no question that caramelized onions are delicious. If you haven't experienced them for yourself and claim you don't like onions you're missing out.  Heat a skillet, throw in a tablespoon or so of oil and about 2 onions sliced thin and let them cook down into delicousness and you'll be hooked.  


For the love of these type of onions I was intrigued when I saw a recipe for grilled cheese sandwiches with caramelized onions and apple butter.  Here the Musselman's apple butter is cooked into the onions and placed atop some nice Dubliner cheese.  They bake up until melty and provided us with a wonderfully comforting dinner last night.




Next time I make these I may opt for the slider route- making tiny sandwiches for a large crowd.  They're tasty finger food and work well for a football gathering or any other time you have some friends over.

{Ingredients You'll Need}
  • 2 Tbs. olive oil
  • 2 large onions, sliced thin 
  • 1/2 teaspoon dried thyme
  • salt and pepper
  • 1/2 cup Musselman's Apple Butter
  • several slices of Dubliner Cheese
  • dijon mustard for the bread
  • good bread or 24 slider buns
1.  In a skillet heat your oil then add the onions stirring occasionally until they are cooked down and golden.  Season with a good pinch of salt and pepper and add in thyme.  Stir then remove from the heat and stir in your apple butter.

2.  Preheat the oven to 350 then place the bread, cheese, then apple butter on one side.  On the other side of the bread slather with dijon mustard, place atop the caramelized onions and bake the sandwiches for about 5-7 minutes or until cheese is melted.  Enjoy!
