no-bake peanut butter rice krispy treats


I was having one of those days where I decided after making dinner, I should go ahead and make a dessert too.  I had to bring meals to a couple people this week and of course they'd want something sweet.  Selfishly, I'd be wanting something sweet too.

As I was looking through cookbooks I came across this recipe and was thankful to see I had everything I needed on hand, especially since I had just picked up some rice krispies for under $2.00 the previous day.  These treats were destined to happen.


The recipe hails from Mad Hungry and I'm thankful for the use of peanut butter in here.  Feed them to your kids as an afternoon snack and maybe you'll think about the fact that they've got some protein in there and it's not all sugar?  That's my thinking...

{Ingredients You'll Need}
  • 1 cup light corn syrup
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 1/2 cups salted crunchy peanut butter (smooth works too)
  • 2 teaspoons vanilla extract
  • 4 cups rice krispies
  1. Line a 9x13 with wax paper, parchment, or use cooking spray.  In a saucepan combine the sugars and bring to a boil then remove from the heat and stir in the peanut butter until smooth.
  2. Mix in the rice krispies and combine then pour into your prepared pan and pat into a smooth layer.  Allow to cool a bit then enjoy!
