One of the things I love most about summer is heirloom tomatoes. I could eat them like apples, on BLT's, or as a salad with some basil, feta, capers too if you have 'em. I like to keep the salads simple because really the tomatoes in the summertime are just so good.
I made up this dish and didn't consider it a recipe, until I got asked what the recipe was. So, I'll attempt to tell you what I did here, although I'm sure many of you do this already and all the time.
{Ingredients You'll Need}
- 5 good heirloom tomatoes
- 5 sprigs of basil, julienne leaves
- kosher salt
- pepper
- good olive oil
- balsamic vinegar
- 2 tablespoons capers
- 1/2 cup feta
- On a platter arrange one layer of tomatoes and sprinkle with salt then drizzle with some olive oil and balsamic. Sprinkle on half of basil, feta, capers.
- Repeat layers, probably just making one more layer.
Enjoy with something barbecued, baked, or even a sandwich. Cheers to summer.
