Tomato, Feta, and Basil Salad


One of the things I love most about summer is heirloom tomatoes.  I could eat them like apples, on BLT's, or as a salad with some basil, feta, capers too if you have 'em.  I like to keep the salads simple because really the tomatoes in the summertime are just so good.



I made up this dish and didn't consider it a recipe, until I got asked what the recipe was.  So, I'll attempt to tell you what I did here, although I'm sure many of you do this already and all the time.



{Ingredients You'll Need}
  • 5 good heirloom tomatoes
  • 5 sprigs of basil, julienne leaves
  • kosher salt
  • pepper
  • good olive oil
  • balsamic vinegar
  • 2 tablespoons capers
  • 1/2 cup feta
  1. On a platter arrange one layer of tomatoes and sprinkle with salt then drizzle with some olive oil and balsamic.  Sprinkle on half of basil, feta, capers.  
  2. Repeat layers, probably just making one more layer.
Enjoy with something barbecued, baked, or even a sandwich.  Cheers to summer.
