{Spicy Honey-Brushed Chicken Thighs}

Similar to yesterday, here's another recipe that comes together in a snap.  Summer is the time of easy quick meals in my opinion and this one is a hit.  Maybe it's the spice rub, maybe the juicy thighs, either way it's what you should make when you're not sure what to make at all.

The husband loves this recipe.  He likes a kick of heat and then the thighs just really have so much more flavor than breast meat.  They're also a lot cheaper which is a top reason why I love them.

{Ingredients You'll Need}

  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground red pepper
  • 8 skinless, boneless, chicken thighs
  • 6 tablespoons honey
  • 2 teaspoons cider vinegar
1. Preheat the broiler then mix together the spice rub in a large bowl- garlic powder through red pepper.  Toss the chicken in the bowl to coat then place on a broiler pan coated with cooking spray. Cook for about 5-6 minutes on each side.

2.  Combine the honey and vinegar then brush that on the chicken and return to the broiler for 1 minute longer.  Flip the chicken and brush the other side then broil for another minute.  Your chicken should be done now and ready for enjoyment.
