I remember making this recipe in high school. I can picture the kitchen in the house I grew up in and throwing peanut butter and orange juice into the blender. I'm pretty sure I made this when my grandpa was over and I remember him being a bit amazed by how well all the ingredients came together.
This is another great recipe to make when you don't have much time. The shrimp can marinade 30 minutes or a couple hours and easily broils up in minutes.

{Ingredients You'll Need}
- 1/3 cup orange or apricot marmalade
- 1/4 cup orange juice
- 2 tablespoons creamy peanut butter
- 1 tablespoon dijon mustard
- 1 1/2 teaspoons curry powder
- 1 teaspoon vegetable oil
- 1/2 teaspoon salt
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon chile sauce with garlic
- 1 lb. peeled and deveined shrimp
1. In a blender combine all ingredients except for the shrimp. Reserve 1/4 cup of the marinade and with the rest add it to a ziplock bag and throw in your shrimp. Marinate for at least 30 minutes.
2. Prepare grill or broiler and then either throw the shrimp on kebabs or onto a broiler rack coated with cooking spray. Cook in a broiler for about 3 minutes per side basting with the reserve marinade.
Enjoy these when they're done with some veg and rice perhaps to soak up the marinade.
