{Blueberry Crumb Bars}



Summer is officially in full swing.  Whatever you're eating today, Happy 4th!, you'll be wanting lots more of in the months to come.  Allow me to add to your recipe box this blueberry crumb bar.  This recipe is a winner; simple enough and if you stock up on frozen berries for smoothies you may not even have to run out to the store.



These bars are delicious warm and can easily be eaten any other time of the day. I may have considered them a breakfast bar at certain times and was a.o.k. with that.  Dare I say these compete with the raspberry bars I made just a few weeks back.

{Ingredients You'll Need for the Crust}

  • 2 cups flour
  • 1 cup old-fashioned oats
  • 1 cup packed brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1 cup chilled, unsalted butter cut into cubes
  • 1/2 cup sliced almonds
{Ingredients You'll Need for the Filling}
  • 3 cups fresh blueberries or one 12-ounce package frozen berries
  • 1 cup blueberry preserves
  • 1 tablespoon flour
  • 1 teaspoon grated lemon zest
{For the Crust}
1. Preheat the oven to 375 then butter the bottom of a 13x9 inch pan.  Whisk together the flour, oats, sugar, salt, and cinnamon in large bowl then add in the butter and cut with a pastry cutter until it resembles coarse crumbs.

2.  Transfer 2 cups to a bowl and mix in the almonds for the topping.  Press the remaining mixture into the bottom of the 13x9 and press with your fingers to form the crust.  Bake until golden about 22 minutes then cool for 10 minutes.

{For the Filling}
1.  Mix all of the ingredients in a bowl and then spread evenly over cooled crust.  Sprinkle over remaining topping and back until bubbly, about 40 minutes.  Cool them on a rack if you can stand it then enjoy!
