...incredibly simple slow cooker chili...


Here's an incredibly easy recipe to throw (literally) into your slow cooker and let hang out for 8 hours.  As much as I love cooking, I love knowing dinner is already taken care of, and that I don't need to worry about being in the kitchen around 5 or 6 o'clock.  This recipe hails from Southern Living yet again and uses one of those chili seasoning packs.  A package I know I've said, "gross.  I'm not using that."  Well kids, I did.  The chili was good, simple, and that's what I was looking for- chili packet and all.



Here's the recipe, loosely adapted from Southern Living.

Ingredients:
2 lb. ground beef (I used organic)
2 T. vegetable oil
3  15 ounce cans of black beans
1 28 ounce can diced tomatoes
2 4.5 ounce cans chopped green chilies (I got mild this time..)
1 onion, diced
1 green pepper, diced
2 teaspoons minced garlic from a jar
1 12 oz can beer- I used Yuengling since we don't really love to drink it
1 package Tex-Mex chili seasoning

In a large skillet saute up the beef until it's browned and crumbly.  Place in the slow cooker then add the rest of the ingredients, stir, cover, and put on low for 8 hours.  It's that simple.  This blend had a nice heat, without being too spicy.  Easy peasy.
