...chicken noodle soup when all you want is broth...

It's really tempting to make chicken noodle soup when you have some leftover chicken and when you have a bit of a cold.  All applied to me this week.  All I wanted, was broth.  So, I turned to what I had in the fridge and seemed to make an everything but the kitchen sink kind of soup.


As you may know, when it comes to soups, it's all about the broth.  I've been loving the concentrated packets of broth from Trader Joe's and threw in 3-4 of those into some water.  It's a great space saver and I think the flavor is just fine.  I did add in some cauliflower that had been roasted in olive oil and rosemary, one rosemary sprig, and some dried tarragon as well.  Apart from the broth, I chopped up a few carrots, celery, and then added in some sweet potato.  Of course there was the leftover chicken, and then also some noodles I had on hand.  All combined for a simmer of about 15 minutes and resulted in a very delicious soup that did the body good.

All this to say, look around you, you might just be able to make a very delicious concoction from all things you have in your fridge and pantry...
