When I picked up the lima beans I also picked up beets. I'd had them a lot at Les and Jer's over the past couple a months, (yes you're probably sensing a theme here when it comes to my close friends) and I was happy to pick up some and roast them in some olive oil and salt and pepper. about 375 for 20 minutes. I love how this seemingly ugly veg is so beautiful when you peel away and see the stripes and lovely purple. They were enjoyed hot, although cold with some goat cheese- just lovely.
