Officially Summer Berry Galettes


I just got back from having lunch and walking around Annapolis with a dear friend from growing up.  I tend to want to say from high school, but reality is we've been friends since she moved to Chagrin in 3rd grade.  We ate crab and lots of ice cream.  I thought I could handle two scoops but reality is my stomach is getting squished and I got full faster than I would have thought.

I came home and couldn't wait to share with you the article on Setting a Summer Table that's up on Metrocurean.  Tricia and I had a blast working together and then dipping into the berry galettes and whipped cream that remained.

This dessert is incredibly simple to throw together.  Really no one should be scared about messing up a simple berry dessert in the summer time.  I use this same base to make individual cobblers as well.

{LB's Good Spoon Berry Galettes}

  • 1 sheet of Trader Joe's pie crust, thawed
  • 1 handfuls blueberries
  • 1 handful blackberries
  • 1 handful raspberries
  • about 3 tablespoons sugar
  • 2 teaspoons instant tapioca
  • pinch of salt
  • 1/2 of lemon, squeezed
  • 1 egg beaten plus 1 teaspoon water
1.  Preheat your oven to 375.  In a bowl mix together berries through lemon.  Let stand.

2.  While the berries are sitting in the sugar and juice take your pie crust and divide it into 4 equal pieces.  Roll each piece into a circle then top each piece with a fourth of the berry mixture.  Fold over the ends and then brush with your egg and water mixture.  Sprinkle with some more sugar.

3.  Place each galette on a parchment lined baking sheet and bake for 15-20 minutes until bubbly and golden.

Enjoy with some ice cream or fresh whipped cream.  Top with some sliced mint for a hit of freshness.

    Looking forward to trying these; they look so delicious! Unfortunately, we don't have TJ's here in San Antonio, so I will have to find some other awesome pre-made pie crust or man-up and make my own :)
