{Heirloom Tomato Salad with Capers, Herbs, and Feta}


Here's another great recipe to make with the heirloom tomatoes you pick up at the market.  This one doesn't require that you make any dressing and should hopefully mean that you're snipping some herbs from your garden and throwing in feta and capers you already have on hand.



The recipe has my Mom's name written all over it- another recipe she copied and gave to me as a hint that I should make it.  Since I made this for company, she should go ahead and just make it herself.  I'm sure she has everything on hand, as should you.



{Recipe adapted from Cooking Light}

{Ingredients You'll Need}

  • about 2 cups or handfuls of heirloom cherry tomatoes
  • 1/2 cup crumbled feta
  • 1/4 cup basil, thinly sliced
  • 2 tablespoons mint, thinly sliced
  • 1 tablespoon capers, drained
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon extra-virgin olive oil
  • about 2 lbs or 4 assorted heirloom tomatoes, cut into wedges
  • 1/2 teaspoon of good salt
  • 1/4 teaspoon pepper
Combine all the ingredients in a bowl and sprinkle with salt and pepper.  Toss to coat and serve immediately.
