...ruth's pumpkin pancakes...


 In my opinion it's almost the weekend.  That means it's time for you to sleep in and wake up to these.  Well, you might have to wake up, make them, and then have em, but regardless, it's fall and you should make all things pumpkin, all the time.  I saw this recipe linked back to the one and only Ruth Reichl.


I didn't have ginger when I made them, but I would love that ingredient in there.  
So, here's Ruth's recipe.


Ruth's Pumpkin Pancakes
1 1/4 cup flour
3 T Brown Sugar
2 t. baking powder
1/4 t. cinnamon
1/4 t. ginger
1/4 t. nutmeg
1/2 t. salt
4 eggs
1/2 stick butter
3/4 cup pumpkin puree
1 1/4 cup milk (I used Almond and it was fine)

Ok.  So- mix your dry ingredients (flour through salt.)  Now mix egg yolks with melted 1/2 stick butter, 3/4 cup pumpkin puree, and 1 1/4 cup milk.


Beat egg whites until peak forms- great time for an electric mixer.


Mix the wet and the dry ingredients then fold in your egg whites.  They'll be light and fluffy and cook up really well.  Serve them with a nice cup of coffee and some real maple syrup.  Enjoy!
