No matter what your situation, everyone is a bit more aware of what they spend, when they eat out, etc. Our house recently was graced with potatoes which can often get eyes, start to sprout, and be done for. I wanted to make use of them and also have a delicious breakfast that wouldn't cost $12+ dollars so went to it with a simple egg and potato dish last Sunday, in the same pan. You might not think this is too exciting, and it kind of isn't, but then again maybe you never thought of doing this yourself, and to those of you I say "weclome, you...can..do...it!"
